The weight mechanic is a little odd with the way it shows the numbers. Your main inventory screen will show you your current weight as well as your total weight whereas if you look in a bag it just shows the bags weight. I've found that when using a default carry weight character (8 max) that one big bag on your back is about all you need.

Cars have an overall weight which can be checked in the vehicle mechanics tab, and the higher it is, the slower the car will go, with the engine adding a speed modifier before sunday driver/speed demon.
